Dinner on the Fly: Warm Brussels Sprout Salad


How many times can I cook brussels sprouts with pancetta?  I am not saying they are not good.  What doesn't taste good cooked in pork fat?  But what else goes well with brussels sprouts?  This was my Wednesday night challenge and here is what I came up with...


Cut brussels sprouts into quarters and toss with olive oil and salt in an oven proof baking dish.  Roast at 350 degrees until tender.  Toss with pecans, blue cheese and a very sweet balsamic glaze.

  4. Oh god, you had me at warm brusells sprouts salad, the rest is just gravy. I am taking advantage of my husband being gone for a week and eating all the kale, brussels sprouts, and orange-flavored savory stuff I can get my hands on. I think I'll add this to the rotation. I even have some pancetta I have to use before I begin my 28 day vegan cleanse on the 15th.

  7. The first time I had brussels sprouts was the first time I was hung over. My sister made them with white wine, which at the time may as well have been rubbing alcohol.

    Somehow, I came around and tried them again! I make essentially the same recipe, but pan roasted and deglazed with white wine. I love brussels sprouts now, but I always think of how much I hated them the first time!

  8. This looks amazing! I absolutely love brussels sprouts! I always include them in holiday menus, but sadly sometimes forget about them once the festivities are over. This is such a fresh take on them and I can't wait to try it. Plus it includes blue cheese, another one of my favorites! Bonus!
